When is a dessert not a dessert?

When the dessert includes the words "sweetbreads," "parsnip custard" or "dragon's breath popcorn."

  4. This seems to be a distinctively Chicago thing - everyone is trying to out-Achatz Alinea and all that gastrochemistry experimentation. I eat dessert to enjoy myself, not to test my gag reflex. Call me a bougie...
